Stovetop Lasagna

Serves 4-6 You’ll need:  1 onion 2 garlic cloves 1 tbsp olive oil 1 lb ground meatloaf mix (beef, pork and veal) Kosher salt and freshly ground black pepper 5 oz baby spinach 1 1/2 cups jar red marinara sauce 3/4 cup beef broth 1/2 cup ricotta cheese Red pepper flakes (optional) 6 no-boil lasagna noodles 1 cup shredded mozzarella cheese 1/4 cup grated Parmesan cheese 1/4 cup chopped fresh basil On a large cutting board, chop the onion and mince the garlic. Heat a 12-inch skillet over medium-high heat and add the olive oil. When the oil shimmers, add the onion and sauté until it begins to soften, about 1 minute. Add the garlic, meat loaf mix, 1 teaspoon of salt and a few grinds of pepper. Break the meat into small pieces with a spatula as it cooks. Cook until the meat is no longer pink.  Add the spinach in two batches, turning with tongs until it wilts, about 1 minute. Stir in the sauce, broth, ricotta cheese and red pepper flakes. BBQ Meatballs

Meatballs: 1 - 1.5lb ground beef 3/4 C oatmeal 2 beaten eggs 1/2 C onion - finely chopped 1/2 C milk 1 tsp salt dash pepper 1 tsp Worcestershire sauce Mix together and make into balls. Put in baking dish. Cook at 250 for 20 min. Make sauce and pour over meatballs and bake 25-40 min longer. Sauce: 1/2 C brown sugar 1/4C vinegar 1 tsp yellow mustard 1 tsp Worcestershire sauce 1 C favorite bbq sauce Boil all ingredients together. Pour over partially cooked meatballs. Serve with rice.

California Carne Asada Burritos

Albondigas Soup

6 14.5 oz cans beef broth 1 28 oz can crushed tomatoes 1 7 oz can diced green chiles  1 large onion, chopped 1 bunch cilantro, minced 2 lbs. ground beef 1 1/2 tsp dried basil 1 1/2 tsp dried oregano 1 1/2 c. white rice salt and pepper to taste lemon or lime to taste Make your meatballs. I used an egg, 1/2 teaspoon of oregano & basil each, & about 1 cup bread crumbs & 1/2 of a chopped onion when I halved the recipe (adjust depending on the fat content of your meat). Lightly brown meat balls leaving slightly undone. Or, use pre-made use frozen meatballs too if you don't want to make them. In a large pot combine: broth, tomatoes & their liquid, green chiles, onion, basil, & oregano. Bring to a boil. Add uncooked rice, cover & simmer for 15 minutes.
